Storage varieties like Yukon Gold and Kennebec take around 100 days to harvest, but new potatoes can be harvested as early as 60 days. Small varieties like Red Pontiac are best for containers.
Potatoes need full sun, loose, rich soil, and consistent moisture. Give them 6-8 hours of sun daily and a couple inches of water weekly.
Prepare the soil down to 6-8", adding plenty of compost. Space chitted seed potatoes 9-15" apart and 6" deep, or individually in large containers.
Potatoes are ready to harvest once the leaves die back. You can harvest small potatoes any time after the plants flower, or leave them in the ground for bigger spuds.
